Add more doenjang to your liking.Gang-doenjang (강된장) is a reduced and thickened fermented soybean paste stew, usually served as a dipping sauce for Korean lettuce wraps (ssam:쌈). It’s earthy, savory, and hearty, and full of fresh chopped vegetables and a bit of meat and/or seafood. Taste the jjigae at this point in time.For less garlic flavor, add the garlic in the beginning! Once the jjigae begins to boil again, add jalapeno and scallions.Remove water from silken tofu and add to the pot! Break it up as you wish.Then add the zucchini and mushrooms to the pot.Add red pepper powder to the pot and stir.Add doenjang to the pot and make sure it 100% dissolves into the liquid.Begin to boil aquafaba and water in a pot.1.5 cup aquafaba (You can use the liquid from canned chickpeas).Chickpeas are a great source of vegetable protein - it's very versatile and you can use it to substitute meat in a variety of meals!
